Pork Vindaloo ***

If my recipe has 3 stars *** after the name, then you know it’s a special recipe for those of us trying to lose weight and still enjoy the goodness and flavour of lovely food!
Ingredients
500gsm pork cut into bit size chunks
(alll visible fat removed)
125ml vinegar
2 peeled onions, largely grated
2 teaspoons oc cumin
2 teaspoons of ground black mustard seeds
8 garlic cloves, peeled and crushed
2 teaspoons finely grated and chopped ginger
2 teaspoons of hot chilli powder (I put in 6)
half a teaspoon of ground cloves
1 teaspoon of ground cinnamon (I put in 2)
400 gsm chopped tomatoes (or, you can use a tin of tomatoes – with the juice)
quarter teaspoon of artificial sweetener
salt
ground black pepper
FRESH coriander
(For those who like it with that extra kick, chilli sliced lengthways in thin slices)
Place the pork in a bowl.
Mix 1 tablespoon vinegar with a little water and pour over the pork.
Use your fingers to make sure the vinegar covers all the pork.
Place the remaining vinegar in a bowl with the onion, cumin, mustard seeds, garlic, ginger, chilli, cloves and the cinnamon.
Mix well to form a smooth paste and pour over the pork to coat evenly.  I use my fingers to make sure the mixture covers all of the pork.
Cover the bowl and leave to marinate in the fridge overnight.
COOKING TIME
Turn on stove plate to get very hot.
Spray the saucepan with a low fat (oil you now get in a spray tin)
or…. if you dont have this, cover the saucepan with a very thin layer of oil
then, place onto the hot stove plate
add the pork pieces, sweetener, the tomatoes and ‘water from the tin’ OR 200 ml of water.
Reduce the heat to low, season well, cover tightly and simmer gently for about an hour or so until the pork is tender.
Remove from the heat and allow this to rest for about 10 minutes before serving.
I serve the above with a lot of fresh coriander sprinkled over the top
and for those who like it hot, sprinkle the remainng thinly slicked chilli and arrange on top.
You can have this on its own or, With a bowl of fragrant rice and/or whatever you wish!
Serves about 4.
