Chilli-Spiced Squid/Calamari ***

Try to make sure that you have FRESH Squid/Calamari.

Remember ….
this only needs a very short time to cook – you don’t want it all rubbery and tough!

The entire cooking time for this recipe should be about 20 minutes.
The preparation time should be about 10 minutes.

Ingredients
700g/1lb/ 8oz of fresh squid/calamari
(cut into bite sized rings or pieces)
2 teaspoons of sea salt
the juice of 2 lemons
1 teaspoon of ground coriander
1 teaspoon of ground cumin
2 teaspoons of red hot chilli powder
1 teaspoon of tomato paste/puree
1 fresh red chilli de-seeded and finely sliced length ways
1 fresh green chilli de-seeded and finely cliced in circles
1 teaspoon of peeled and finely grated ginger
2 cloves of garlic, peeled and crushed
cooking oil spray
a large handful of freshly chopped coriander leaves
1 red onion, peeled and sliced very thinly
1 handful of chopped mint leaves
Place the squid in a bowl
and in another bowl
Method
  1. mix in the sea salt, lemon juice, ground spices, chilli powder, tomato puree’, fresh chilli, ginger & garlic

  2. pour this mixture over the squid
  3. toss to coat evenly
  4. cover and allow to stand at room temperature for 10 minutes
  5. spray a pan with the oil and place over a very high heat
  6. working in batches, lift the squid from the marinade and sear in the hot pan for 3 minutes
  7. remove and keep warm in a serving bowl while you repeat this process for the remaining squid
  8. just before serving, toss in the chopped coriander, red onion and chopped mint
  9. This can be served on its own or with a lovely salad (your choice) and crusty fresh bread/butter.

     

Enough for about 4 people (once again, depending on your portion size)

Eat straight away

    Wow this is really making me hungry, I love squid but haven't got round to trying to cook it myself yet. We get some pretty decent seafood up in Aberdeen I'll have to see if there's any squid at the fish market next time.Have a lovely evening,Jade

  2. This looks yummy!!! I love calamari…. and honestly I don't eat a ton of fried food, so this option suits me quite well!
