Hot Cross Buns (Hubby Tony’s Recipe)

Easter is celebrated  in different ways all over the world.
Hot cross buns & spice buns which are similar,  decorated with the symbolic cross are generally eaten on
Good Friday.

Ingredients

375 ml Milk
60 g butter
4 x 250 ml cake flour
15 ml mixed spice
5 ml ground cinnamon
5 ml salt
55 g castor sugar
10 g instant dry yeast (1 sachet)
120 g sultanas
1 beaten egg

Flour Paste for the Crosses

70 g cake flour
10 ml castor sugar
75 ml water

Glaze

30 ml milk

30 ml water

Method

  1. Heat  milk and butter together and leave to cool slightly
  2. Sift flour, spices and salt together. Add sugar, yeast & sultanas.
  3. Stir in warm milk, butter and egg. Knead well until smooth – about 10 minutes.  Cover and leave in a warm place for about 1 hour, or until the dough has doubled in size.
  4. Knead for a further few minutes until smooth.  Divide into 12 medium-sized balls and place on a greased baking tray.  Cover and leave in a warm place for 10 minutes, or until the buns have risen.
  5. For the crosses:  Mix flour and sugar together and add enough water to form a smooth paste.  Then place the paste in a piping bag using the small, plain tube fitting, make crosses on the buns.
  6. Bake in a preheated oven at 190 degrees C (375 degrees F) for 15-20 minutes.
  • For the glaze:  Heat the milk and sugar without boiling.  Turn buns onto a wire rack and brush with the hot glaze.

    I've seen these in Ireland, but all year round, I think. They were nice:) That was in the good old days when I could eat any bread.
