Almond Jelly

Ingredients

2 cups of cold water
a third cup of Castor sugar
2 teaspoons of agar agar
150 ml, can of evaporated milk
a half a teaspoon of almond essence
3 fresh mandarins, peeled and segmented or 300 g fresh cherries, pitted and chilled

  1. place water and sugar in a small pan
  2. sprinkle on the agar agar powder
  3. bring to the boil, simmer for 1 minute
  4. add the evaporated milk and essence & pour into a shallow pan to set
  5. chill for at least an hour then cut the jelly into diamond shapes and serve with the fruit

Tip

Cook one day ahead

Variation:
agar agar is similar to gelatin but does not need refrigeration to help it set
if it is unavailable, use 3 teaspoons of gelatin sprinkled over a half a cup of cold water to soften
pour into the water and sugar mixture
bring to the boil, then remove from the heat

there is no need to simmer

proceed with the method; refrigeration time will be approximately 5 hours

Home-made chicken stock can be frozen ready for use at any time
